Easy Peasy Paella

This one is as quick and easy as yo’ momma… just kiddin’ …but it is really easy…and so is yo’ momma….I’m sorry I’ll quit. But really, it only took me about  30 minutes.

Now, I am neither Spanish, nor do I pretend to have great knowledge of the Spanish tradional cuisine. However, I do know good food. After all, I have been eating all my life and I am telling you,  this one is goooooood.  It’s my, very easy and very quick version of a paella and I think that you owe it to yourself to make it sometime.

Honestly, I rarely follow recipes to the letter… I just use them as inspiration, so feel free to do the same!

Easy Peasy Paella

Ingredients

  • Parsley, 1 large bunch
  • Chickenbroth, 1 cup
  • Saffron, 1 teaspoon
  • Garlic, 1-2 cloves
  • Rice, 2 cups
  • Shrimp, 200 grams
  • Chicken, 200 grams
  • Green peas, 100 grams
  • Tomatoes, 2 big ones or 4 small ones
  • Olive oil, 2 tablespoons
  • Pepper, 1 teaspoon or to taste
  • Salt, 1 teaspoon or to taste
  • Cayenne, 1 teaspoon or to taste
  • Red pepper, one

Recipe for 2 people

  1. Cook the rice and leave it to cool (see here for the regular way or here for the microwave way) (al dente; it’s better if it’s not fully cooked yet)
  2. Mix the chickenbroth and the saffron in a bowl and leave it for a couple of minutes
  3. Cut the chicken and the parsley
  4. Bring all the olive oil to heat and add the garlic
  5. When the garlic is simmering but not yet discolored add the chicken and cook until brown
  6. Add salt and pepper
  7. Add the chickenbroth & saffron and the shrimp and stir until the shrimp is pink
  8.  Add the tomatoes, green peas and half of the parsley and leave to simmer without the lid, until there’s only a little broth left
  9. Taste and if needed, add a little more salt, pepper or cayenne
  10. Add the rice and stir until everything is well mixed
  11. Put on plate, make sure to put some shrimps on top. For the finishing touch; sprinkle the rest of the parsley on the rice and all around the plate
